The Honeybee Welcome Cocktail

To start, you will sample our honeybee cocktail with Fettercairn and our local bee-keeper Ed.

The honeybee cocktail is a beautifully balanced celebration of Scotland’s natural larder, The Honeybee brings together our house‑infused citrus spirit, locally sourced honey, and a whisper of wildflower aromatics.

Crafted with sustainability at its core, the cocktail champions low‑waste methods and responsibly sourced ingredients, using honey from ethical Scottish apiaries, dehydrated citrus garnishes repurposed from our kitchen, and botanicals chosen for their minimal environmental impact.

Light, bright, and naturally sweet, The Honeybee is our tribute to pollinators and the vital role they play in Scotland’s ecosystem.

Fettercairn

Fettercairn sources 100% of its barley from within 50 miles through the Fettercairn 200 club, ensuring sustainable farming for future generations.

The distillery relies on natural spring water from the Cairngorms, essential for whisky production and cooling. In 2020, 13,000 oak saplings were planted to grow a future forest for cask-making, while wind-felled Scottish oak is currently used in collaboration with local estates and cooperages.

Ed’s Bees

Ed’s Bees, founded by Edward O’Brien, is a local business that keeps over 400,000 bees in Glasgow. Ed’s hives can be found in various urban locations, including iconic buildings like the Blythswood Hotel, the Hydro and many corporate businesses. This honey has an ever-changing flavour due to the different flowers and blooms available throughout the year.

Gael & Grain is delighted to feature Ed’s Bees honey – a true taste of Glasgow’s rich and diverse natural landscape. From the parks and gardens of Pollokshields to the West End’s botanical surroundings, Ed’s urban beekeeping provides a haven for honeybees while producing some of the most unique and flavourful honey in Scotland

Graham’s Dairy is a genuine family business since 1939, working with 100 selected farming partners to uphold values of family, farming, heritage, provenance, and quality.

A genuine family business, Graham’s was founded in 1939 by Robert Graham in Bridge of Allan, Stirlingshire, where he reared 12 cows, milked them by hand then made all deliveries by horse and cart.

A highlight on our menu is the Scottish smoked salmon from the Highland Smoked Salmon Company in Fort William, served with Scottish oatcakes and Katy Rodger crowdie and chives.

All our fish and seafood are brought fresh daily from our local fish supplier, The Fish People. The nutrient-rich waters of the North Atlantic Drift along Scotland’s West Coast produce the very best fish and seafood.

Sriracha Honey Chicken

The last savoury dish on the platter is our Sriracha honey chicken, a fiery fusion of heat and sweetness, crafted with care and local pride.

We start with premium chicken from Campbell & Sons, known for their ethically sourced, high-quality cuts. Each piece is marinated in our signature blend of sriracha, garlic, and a touch of soy, then glazed with Ed’s Bees Honey - a golden, floral nectar harvested from wildflower-fed bees right here in the region.

Whisky Cranachan

Moving onto our desserts, we are proud to present our local honey and whisky cranachan, made with Scottish raspberries, local honey, whisky, cream, and oats.

We work alongside Ed’s Bee’s Honey for this delicious dessert. Enjoy the unique taste of our honey and whisky cranachan, a perfect blend of traditional Scottish ingredients and local sustainability efforts.

Comedy by Ross Leslie

Later in the evening, guests will receive a warm welcome from Ross Leslie, a comedian by night and a history tour guide by day.

Ross will take them on a lively, humorous journey through Glasgow’s past, from its world-famous shipbuilding heritage to its surprising moments in Hollywood.

Along the way, he’ll celebrate the city’s unique sense of humour, perfectly symbolised by the iconic Duke of Wellington statue.

Good Egg Comedy

Established in 2021, family-run comedy collective dedicated to delivering outstanding stand-up experiences across Glasgow and Edinburgh on a regular basis, with several other shows around the central belt.

Founded and regularly hosted by comedian Ross Leslie, Good Egg Comedy is known for its warm, welcoming atmosphere and its commitment to showcasing both established performers and emerging talent.

His stand-up set will also weave in personal anecdotes, touching on family life, health, and a collection of other relatable and comical stories, ensuring plenty of laughs throughout the night.
